Step 1
Trim and thinly slice about ½ cup of the radishes. To build the sandwiches, place 8 slices of bread on a cutting board. On half of the bread, arrange the radish slices and arugula. On the remaining bread, spoon dollops of egg salad, season with salt and pepper, and press the sides together. Slice the sandwiches in half and serve. Or wrap them and refrigerate for up to 1 day.
