These cute bites are a not-too-sweet mix of dates, cashews, cocoa, and sesame seeds. Rolled in coconut, they're the perfect pick-me-up and afternoon snack.

Step 1
Remove the pits from the dates and tear each date into a few pieces. Place 1 cup cashews in a food processor and pulse a few times to coarsely chop. Add the dates, ¼ cup cocoa powder, and a pinch of salt and pulse a few times to combine. Process until the mixture forms a ball, about 30 seconds.
Step 2
Transfer the mixture to a bowl, sprinkle with the sesame seeds, and stir to combine (it will be thick and a bit sticky).
Step 3
Line a sheet pan with parchment or wax paper. Scoop out 1 tablespoon portions of the mixture, and roll between lightly dampened hands to form smooth balls. Place the energy bites on the prepared pan.
Step 4
Pour ½ cup coconut into a small bowl. Roll each ball completely in the coconut and return to the pan. Refrigerate until chilled, at least 1 hour.
Step 5
Serve the energy bites chilled, or transfer to an airtight container and store in the refrigerator for up to 1 week.
