Made in the Style of St Marcellin, a classic soft-ripened cheese of the Rhone-Alpes, Pianoforte is extremely soft, to the point of being gooey when a little more aged. The flavors are nutty, mushroomy, and rich with sweet cream, with a balanced hint of acidity in the finish. Pair with Champagne or a Saison.
